Use the exile greatsword/Vordt's hammer/Great Club (basically any strength-scaling weapon with high base damage) and get strength to at least 50 for pretty good damage. I'd recommend getting Vigor and Vitality up as well, as you'll probably need to trade some hits with your enemies and that a high HP pool and poise helps with that.
